This Banana, Almond and Tahini Bread is a baked delight that produces incredible flavors to share! With its tempting aroma that fills the kitchen and its spongy texture that melts in your mouth, the bread is a masterpiece in homemade baking. There are some ingredients that can be optional, such as sesame seeds or even tahini (in the recipe I give an alternative replacement) but in case you have all the ingredients as indicated, you will get more than just a simple mixture of baked ingredients.
This time I also wanted to place one of the three bananas that the recipe includes on top to give it a different touch; the texture changes and it feels very delicious when you taste it.
One of the wonders of bread is its versatility. It can be enjoyed at any time of day โ from a comforting breakfast accompanied by a steaming cup of coffee, to an indulgent dessert after a hearty meal. Plus, itโs the perfect canvas to experiment with additional flavors, such as nuts, fresh fruit or even a touch of liquor.
Always remember that when using this type of mold, in some ovens it is difficult for some people to get it completely cooked in the center, therefore you should always check with a knife or skewer stick in the center to see if it is fully baked, this stick or knife should come out dry, if not, then you should cover it with aluminum foil to continue cooking and with this you will not let it burn on top.

Ingredients
- 1/4 cup oil
- 1/4 cup tahini (or substitute with oil)
- 1/4 cup honey
- 1/4 cup brown sugar or whatever sugar you have
- 2 eggs
- 2 ripe bananas, mashed
- 1 extra banana to top
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup oat flour (you can substitute with whatever you have)
- 1 cup almond flour (you can substitute with whatever you have)
- 1 cup chocolate chips (ideally 70% cacao)
- 1/2 cup walnuts or almonds
- 1 teaspoon sesame seeds (optional)
Instructions
- Preheat the oven to 180ยฐC (350ยฐF).
- Chop the walnuts or almonds and toast them in a pan over medium heat for 5 minutes. Then place them on a plate and set aside.
- In a bowl or mixer, mix the oil, tahini, honey, sugar, vanilla and eggs.
- Add the ground bananas.
- Then gradually add the flours, salt, baking powder and baking soda.
- Add the chocolate chips and toasted walnuts or almonds.
- Pour the mixture into a rectangular mold, previously greased or covered with baking paper.
- Cut a banana lengthwise and place it on top of the mixture and sprinkle with sesame seeds.
- Bake at the same temperature for 50 minutes. If you need more time, cover with aluminum foil so that it does not burn on top and so that it can finish cooking in the center of the cake.
- Let it cool before cutting.
