It seems incredible to me when I look back and realize how my (and my husband’s) habits have changed over time. In our native country of Chile we never really had a firm habit of giving enough importance to dinner, and we ended up frequently eating something light, or just a piece of Chilean bread accompanied by some ingredient like avocado, as well as some other ingredients.
But living here in the United States made our customs to start changing a little, and we began to like the detail of having a well-made meal. And it is evident with the day-to-day routine, as well as the “arrival” of the kids to our lives, that the time is gradually becoming more and more tight, and that’s not even also taking our regular jobs into account. It is precisely in those very busy days we have that we try to look for our space as a couple again. And what better time than sharing and enjoying a delicious dinner to finish the day.
So, in a time when I was taking care of all those multiple tasks, I went to the Kroger supermarket on my neighborhood, and purchased a pack of Bertolli® Shrimp Scampi & Linguini Pasta. With my husband we are both big fans of pastas mixed with seafood in general, but we are particularly fond of shrimp, and we truly enjoyed this variety from Bertolli®.
This is a great alternative if your schedule is tight, and you don’t want to get stressed out with thinking about what to do for dinner. You can show off and enjoy more time with your partner or family.
Best of all, you only need a couple of minutes to get this tasty dinner. In addition, I wanted to also prepare a simple yet delicious spinach salad with blue cheese, pine nuts, applewood-smoked bacon & white balsamic vinaigrette. At home we are also big fans of salads, but this particular version was the perfect pair to accompany the Bertolli® Shrimp Scampi & Linguini Pasta. Bertolli’s motto “Don’t just eat. Mangia” (mangia is Italian for “to eat”) is a true statement of their effort to make their meals exciting and enjoyable.
In aisle #17 of my neighborhood Kroger Supermarket, in the “Family Meals” section, I was able to find “Bertolli® Shrimp Scampi & Linguini Pasta”, as well as many of its other varieties like:
- Bertolli® Chicken Florentine & Farfalle Pasta, 24 oz.
- Bertolli® Shrimp Scampi & Linguini Pasta, 24 oz.
- Bertolli® Chicken Alfredo & Penne, 24 oz.
- Bertolli® Chicken Parmagiana & Penne, 24 oz.
You should be able to find Bertolli® Meals for Two on sale (at their lowest price of the year) during the month of February 2017 at Kroger and its banner stores (Dillons, Fred Meyer, Fry’s, QFC, Ralph’s, Smith’s, King Sooper, Pay Less Super Markets, Owen’s, Food Co., Baker’s, Gerbe’s, Jay C’s, City Market).
Spinach salad
- Total Time: 20 mins
- Yield: 2 1x
Ingredients
- 2 cups of fresh spinach
- 1 tablespoon of blue cheese
- 1 tablespoon of pine nuts
- 2 slices of applewood-smoked bacon
- 2 tablespoons of white balsamic vinaigrette
Instructions
- Lay the slices of applewood-smoked bacon on a baking tray, and bake for 15 minutes in the oven at 400°F (200°C).
- Once the bacon is ready, cut it into small pieces.
- To assemble the salad, just mix all the rest of the ingredients and enjoy.
- Prep Time: 5 mins
- Cook Time: 15 mins
