Is it possible to mix two types of cuisines in the same recipe? The answer is absolutely yes! And today, thanks to Kikkoman, I can bring to you this delicious crostini with chicken and pineapple teriyaki. This appetizer is very simple to prepare, and thanks to how versatile the Kikkoman Teriyaki sauce for marinating and sauces is, we can do incredible mixtures of flavors.
This time I wanted to join this ingredient with the popular crostinis from Italy, which are characterized by having a large variety of appetizers with their toppings placed on a nice baguette bread. And now I bring to you this recipe for this exquisite chicken, which thanks to being marinated in Teriyaki sauce from Kikkoman it achieved an intense flavor, along with the pineapple that adds an entirely enjoyable taste. I should also mention that, just like good wine, Kikkoman soy sauce is aged for several months in order to develop its characteristic rich yet mellow flavor, appetizing aroma, as well as its distinctive reddish-brown color.
In my family we are big fans of crostinis, but we also love sushi. And I mention this, because when I prepare california roll sushi, the most successful combination I make is the blend of cream cheese, avocado, and some seafood or fish. Then, since the flavor of the chicken and pineapple are stronger, with the cream cheese and avocado I can achieve a fabulous balance.
I must confess that I have been very pleased to make this recipe with this product of Kikkoman, as it’s common for me to have their Teriyaki sauce in my pantry. And this is because that thanks to its versatility I can prepare different types of meats, sometimes marinated, and sometimes I just sprinkle a little bit to give it a different touch before cooking, in order to enhance its flavor and add a salty-spicy taste to it.
This Teriyaki sauce is very popular here in the United States, and is a common practice to add fresh ginger, brown sugar, pineapple juice, or green onions to make this Teriyaki sauce taste even better.
This appetizer is perfect for a gathering with friends or family, because (as I mentioned before) it makes a mixture of two cuisines, on one side the Italian one with these breads as a foundation, and on the other side with the Teriyaki sauce that began as a simple mixture of soy sauce and spices, and today it’s a very popular sauce since it was created for the first time in Japan.

Ingredients
- 1/2 chicken breast
- 3 slices of pineapple
- 1/2 teaspoon of vegetable oil or other
- 1/2 cup of teriyaki sauce Kikkoman
- 1 avocado
- 4–5 tablespoons of cream cheese
- 2 tablespoons of chopped chives
- Sesame seeds (optional)
- 1 baguette bread
Instructions
- Cut the chicken breast into small squares, and then place them in a bowl with the teriyaki marinade for 20 minutes or more.
- Heat a frying pan containing some oil, and cook the chicken with the teriyaki sauce. This lasts approximately 10 minutes. When you are almost at the end of cooking, add the chopped pineapples, and let it cook for another minute.
- Cut the baguette bread into thin slices, and then toast them or warm them up in the oven for about 6 minutes at 350°F (180°C).
- Spread a little bit of cream cheese over each bread slice, then add a few pieces of avocado, a piece of chicken and pineapple. Finally garnish with chopped chives and sesame seeds.
